WHATS ON HAND???!!?!

hmmmm……I spy oats!!!!!!

Finding filling foods for quarantine  days. I have plenty of oats on hand with some raisins. My sister loves chocolate chips and walnuts and asked me to make a treat for her. So I came up with the following recipe and we have enjoyed them for a couple of days with some left that are in the freezer to be pulled out and enjoyed with a cup of hot tea at night time.

So I came up with the following recipe and we have enjoyed them for a couple of days with some left that are in the freezer to be pulled out and enjoyed with a cup of hot tea at night time.

Oat/flax Cookies with  raisins and walnuts (and chocolate chips)

3 1/2 cups oats

3/4 cup brown sugar

3/4 cup white sugar

1 1/2 cups all purpose flour

1 tablespoon  baking soda

1/2 cup flaxseed, ground

2 sticks butter, softened

2 eggs

1teaspoon vanilla

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

3/4 cup chocolate chips

3/4 cup chopped walnuts

3/4 cup raisins

Directions:

Preheat oven to 350 degrees.
Using bowl of stand mixer, cream butter and sugars until creamy.
Add eggs and vanilla and beat until  creamy.

Add combined baking soda, spices, flax and flour.  Mix until combined.

Add oats, raisins, to creamed mixture and stir.  Batter will be thick

Refrigerate  batter for an hour or more.

On  cooking sheet, scoop batter by rounded tablespoons onto sheet

Bake for 10 minutes.  Remove to wire rack to cool.
